Our club must be doing some heavy reading this summer….here are several recommendations of books to read!

Book Club Bike Ride
to Coffee Shop in Grimes

Cheesy Jam Loaf
This is the recipe for the yummy treat that Cathy Engstrom served at February Book Club:
½ c warm water Filling:
1 pkg dry yeast 8 oz cream cheese
1 Tbsp sugar ½ c sugar
3 c. Bisquick 1 Tbsp lemon juice
1 egg (beaten) ¼ c jam (or more, any flavor)
Mix yeast in water and 1 Tbsp sugar – let sit 5 minutes or until foamy. Stir in Bisquick and egg. Mix. Turn out
and knead 20 strokes. Place dough on 15x12” sheet pan. Roll into 14x9” rectangle. Mix cream cheese, ½ c
sugar and lemon juice. Spread lengthwise down center third of dough (stop an inch or so from each end).
Along the long sides of the dough, make 3” cuts about one inch apart (like fringe). Interfold strips over cream
cheese and fold up ends to avoid leakage. Cover and chill overnight. Bake at 350 degrees for 20 minutes
(uncovered). Spoon jam over center immediately and serve warm. (NOTE: We prefer raspberry or apricot jam,
but any flavor is fine.)
